Peanut Butter Rolls

Ok, so one of my favorite things in this world is peanut butter. I love peanut butter. Peanut butter cups, peanut butter sandwiches, peanut butter ice cream, and all of the above. So why wouldn’t peanut butter rolls be my absolute favorite thing ever??

They are. My favorite thing ever, that is. They’re SO GOOD. My favorite breakfast. I find myself craving them constantly now that I’ve made them once. When I run out of them during the week, well… it’s a sad day in MariahLand.

The best thing is, I’m the only one in my family that likes these rolls, so I get them all to myself. And it’s wonderful! Then they actually do last for a whole week and I have a wonderful breakfast every morning. It’s the best.

So if you like peanut butter… let me tell you, you’ll absolutely love these.


Peanut Butter Rolls: The Recipe

Ingredients:

  • 3 eggs
  • 1 cup sugar
  • 2 cups very warm milk
  • 1 cup peanut butter
  • 2 packets or 4 1/2 tsp yeast
  • pinch of salt
  • 7 cups flour
  • 3 sticks butter
  • 2 cups crunchy peanut butter
  • 2 cups brown sugar
  • 1 bag mini chocolate chips
  1. Mix eggs and sugar until light and fluffy.
  2. Add peanut butter to milk and microwave until very warm, about 2.5 minutes, then add to eggs and sugar and mix well.
  3. Add yeast, salt, and 4 cups flour and combine.
  4. Add one stick of softened butter and mix.
  5. Change to dough hook or knead in the last 2 or 3 cups of flour. You want the dough to be sticky, so don’t add too much.
  6. Place the dough in a buttered bowl, cover with a towel, and let rise for at least one hour.
  7. After the dough has risen, separate it into two equal lumps.
  8. Roll out one half of the dough into a rectangle. You can use cooking spray if it sticks to the counter too much – don’t use flour.
  9. In a microwave safe bowl, mix 2 sticks butter and crunchy peanut butter and microwave until melted, in 30 second intervals. Then add brown sugar and combine.
  10. Pour half of the filling on the rolled out dough. Spread with a spoon until it covers the dough and sprinkle chocolate chips over the filling.
  11. Roll the dough and cut into about 12 equal rolls.
  12. Place in greased 9×13 pan.
  13. Repeat steps 8-12 for the second half and let the rolls rise in the pans for about 30 minutes.
  14. Preheat the oven to 325 F.
  15. Cook the rolls for 35-40 minutes.
  16. Add a frosting of your choice – I like to do a peanut butter frosting with 1 stick butter, 1 cup creamy peanut butter, 4 or 5 cups powdered sugar, milk, and vanilla.
